We’re just over two months into the school year and I’m trying to keep lunches new and fun for my kids. I know they like the cookie cutter sandwiches, love notes from mom, and taking their favorite leftovers to school, but I still like to mix it up for them.
On weekends, we usually eat lunch while we’re out and about, but last weekend we were home and didn’t feel like going out (oh, and still in pajamas at noon!). As it came to lunch time I realized (yikes!), we’re out of bread. And we’d done a good job of bringing leftovers to school so that wasn’t an option. The fridge and pantry were slim pickings. And we were all hungry.
So I told the kids about Almond Butter and Banana Roll Ups and they loved the idea! We had bananas, almond butter (which spreads a lot easier than peanut butter) and tortillas so we were set. I even made one myself and have to admit, it was really good. The almond butter and banana were just the right combination of yumminess!
And now we have a new requested meal for lunch: Almond Butter & Banana Roll Ups.
