We all have those nights where you rush home and realize that kids need to be fed, and there’s little time, or energy, to do much. While it’s a great goal to try to plan ahead for those times, it’s just reality that we can’t always anticipate them.
In our home, we try to have a few quick and easy go-to meals on hand that are still healthy meals, but they don’t require a lot of time or work.
Tonight, we pulled out spinach quesadillas, spanish rice and fruit. It took hardly any time, provided a balanced dinner, and the kids loved it.
What are some of your quick and easy, go-to meals?
Note: To make dairy-free quesadillas, we use Daiya vegan cheese. We’ve tried a lot of vegan cheeses and haven’t found one that tastes great and melts like Daiya.

This looks delicious. WE love quick quesadillas in our house. One of our favorite quick and go to dinners is a delicious one skillet speedy chicken. It’s a wonderful and easy marinade that we put on chicken and whip it up in the wok. It can be eaten plain or we wrap it up in a burrito for a chicken burrito or wrap! I sneak in the extra nutrients for the kiddos. But paired with some grapes and they have a quick and easy, healthy meal!
When I am on top of things, I like to keep some Italian Turkey Sausage in the fridge – it crumbles really well and makes a fantastic and hearty meal when mixed in a serving dish with some greens and pasta. With our picky daughter, she can pick out the parts she doesn’t like, so that mealtime isn’t a drama. Ugh. I also try to have lettuce on hand for a quick salad with homemade dressing.
Great ideas – we love one pan meals! Having some basic ingredients on hand make these simple too. We pretty much always have rice or pasta around, that can easily be tossed with the veggies we usually have in the crisper, along with meat or beans.

I love, love, love Daiya cheese! I recently have tried regular cheese and was pleasantly surprised that I actually prefer Daiya to dairy cheese when it comes to things like pizzas and grilled sandwiches. I don’t eat it straight from the fridge like my daughter will, but melted- mmmm, mmmm, mmmm!
Wow, Sara, I’m impressed that your daughter will eat it cold from the fridge – I can’t do that either. We were thrilled to finally find a vegan cheese that tastes good AND melts! Even better is how common it’s becoming at the market.
