Coming back from four long, full days at a conference, I have to admit that taking on new recipes or cooking big dinners just wasn’t going to be part of a successful meal plan for the week. Thankfully, I knew that ahead of time, and planned accordingly (It’s good to see that I’m learning to be honest with myself – I’ve only been working on this for decades!).

While I had hoped to sneak out of work a little early, it didn’t happen. The first night, that was fine since we had Hearty Slow Cooker Turkey Chili on the meal plan. Dinner was done when I walked in the door. Woohoo!

The following night we had planned this really simple Chicken and Broccoli Stir Fry with Peanut Sauce. It’s an easy and healthy meal that the kids love. Let’s face it, we need lots of these types of dinner ideas in our toolkit, right? While I’d love to think that I’ll have more time to prepare dinner, the reality is that I rarely do during the week. Peanutty Stir Fry

 

Chicken and Broccoli Stir Fry with Peanut Sauce

Ingredients (serves 4)

Vegetable or sesame oil

1 pound chicken, cut into bite-sized pieces

2 cloves garlic

2 tsp minced ginger

6 to 7 cups of broccoli (or mix it up with your favorites), chopped

3 tbsp hot water

3 tbsp peanut butter (chunky works great)

3 tsp low-sodium soy sauce

1 tbsp rice vinegar

Directions

Coat a nonstick pan with about 1 tablespoon of oil. Sauté vegetables in oil on medium heat until tender. Set aside in a bowl.

Coat the same pan with another tablespoon oil, and add the garlic and ginger for two minutes, until golden in color. Add chicken and sauté on medium heat until cooked through.

While chicken is cooking, make the sauce by adding hot water to the peanut butter. Whisk until well mixed. Add the remaining ingredients and stir well.

Add the vegetables back in the pan. Add the sauce and toss until thoroughly mixed.

We serve this stir fry over brown or jasmine rice and sometimes sprinkle minced peanuts if we use smooth peanut butter.

Shortcut tip: Have your butcher cut the meat for you to save you time preparing meat. This always takes me the most time. You can also buy frozen vegetables or stop by your grocer’s salad bar to buy pre-chopped vegetables.
