Some of you know that I just returned from three full days at Natural Products Expo West, which is the largest industry event for natural and organic manufacturers and retailers in our country. I met amazing people and companies bringing great products to our stores, and there were many more that I didn’t even get to! The event was huge.
My kids were anxious each night to hear that I met with the brands we love – Annie’s, Amy’s Nature’s Path, YummyEarth, and more. And they thought it was pretty cool that the Pirate Booty pirate was there! I was too – some days were so busy that Tings (and other company’s samples here and there) were lunch.
I’m so happy that I made time to stop by the Stonyfield booth to meet Laurie David. I’m absolutely loving her Family Dinners book. Loving!
Part of our meal plan for the week was Irish Stew in the slow cooker for St. Patrick’s Day. Well, it was a busy day at our house with swim class and then a friend over much of the day for my daughter, and we were missing one ingredient, so that didn’t quite come together. That happens, right?
We still celebrated our Irish heritage that night, and came across an even better recipe for Guinness Beef Stew from Simple Bites. It was amazing! My kids loved it too. We’ll make it again, for sure.

It’s Spring Break in Oregon so I’m looking forward to some time off with my family, and our fingers are crossed for at least one dry day!
