Here in Oregon, we enjoyed a few beautiful spring days last week and even though it was chilly, I heard of many friends working in their yards, playing outside with the kids, and soaking up the sun. After too many months of grey, cold and wet days, these longed-for sun-sprinkled days are the ones we treasure most.
Here’s a few highlights from last week:
Raise Healthy Eaters shared an artilce called 7 Nutrients Even Healthy Eating Kids Miss that tells our story about the nutrient deficiencies we were shocked to learn our son had. He’s always been the healthiest eater I know, but still needs supplements to make sure his body gets what it needs.
We shared a Simple Bites article on Facebook about Healthy Fats Make Healthy Children, and many readers told us how they make sure their children get enough healthy fats. We’re looking forward to incorporating coconut milk for our kids.
We love Kids Konserve lunch and snack gear, and were happy to find their 20% off deal for the month of April to share with you. It’s a great time to stock up for summer camps.
Did you drive by the drive thru on Friday to have dinner at home with your family? We were excited to use our grill for the first time this year for salmon burgers (that everyone loved!), roasted broccoli and couscous. After dinner and clean up, my son played a guitar concert for the rest of us, and we all enjoyed a relaxing start to our weekend.
What’s on your menu for the week ahead? We’ve got school meetings, soccer and parent conferences impacting dinners so we’re going to do the best we can with the busy nights.
Monday- Quinoa with Black Beans
Tuesday – Pasta (our make ahead pasta sauce we made two weeks ago and froze)
Wednesday – Mummy’s Ramen Noodles
Thursday – Fish Sticks, sweet potato fries and fruit
Friday – Mexi Bowls (rice, kidney beans, roasted broccoli, cheese and salsa)
