On any given night, if you ask my kids where they’d like to go out to dinner, nine out of ten times they’ll tell you Mexican food. They love it and can’t get enough. Luckily, so do we.

Since we can’t go out as often as they’d like, we make their favorites at home. A frequent dinner on our meal plan is our Mexi Bowls. When we spent a weekend at the coast last month, we even made them out there.

The basics are constant: Spanish rice, beans (black or pinto beans), cheese, salsa and a vegetable. We mix it up by using different veggies (roasted broccoli is our current love), and adding avocado slices, a squeezed lime, or black olives if we have them. We’re planting tomatoes in our garden this year so I’m sure they’ll find their way into our Mexi Bowls later this summer.

This is one of those meals that I plan for a crazy-busy weeknight. I can make the rice ahead (we also have an organic Spanish rice mix we like), and either make a big batch of beans in the slow cooker early in the week, or open a can of beans that night and warm them up. If we didn’t have a stay-at-home parent, I’d invest in a rice cooker because we make rice so often and there’s other useful reasons to have one around.
