Whether you’re on the east coast looking forward to some heat relief, or in the northwest praying for sun, smoothies are one of the best parts of summer. Some days, we just toss whatever we have in the blender, but we also love these tasty recipes too:

Have you been grilling a lot like we have? I love to try new things, which has gotten easier now that we have a vegetable basket. This week, I want to try this recipe from What’s Cooking with Kids for roasted beets. My kids love the kale chips from her cookbook, The Whole Family.
This past week, we picked up some fresh beans from the farmer’s market and used them in our Sausage, Peas and Pasta toss along with peas. We left out the cinnamon and used a mix of herbs from our garden: thyme, oregano, and sage. It was amazing! I hope green beans are still in season for a few more weeks so that we can have this again.
On my list for the upcoming week is 16-Minute Shrimp Scampi from Pioneer Woman. Why? We all love a simple shrimp dish around here, and I especially appreciate that I can serve dinner in 16 minutes!
What are you cooking up this week?
