Since our new schedule started this fall, we’ve really tried to make dinners pretty simple. The criteria most nights mean that it’s something that my husband can easily make, a slow cooker meal, or the make-ahead meals that come out of the freezer and go into the oven during soccer practice or whatever we’ve got going on that night.
So, what have we been eating?
Mexi Bowls (man, my kids love these as much for lunch the next day as they do dinner!)
Hearty Turkey Slow Cooker Chili
Pasta!
Breakfast for Dinner (some nights that eggs with an English muffin and roasted potatoes, other times it’s a spinach and egg scramble)
Finger Licking Good Baked Chicken
How do you get dinner on the table on those crazy school nights?

Thanks for sharing these, they’re fantastic and simple.
My contribution: Jules Clancy’s Simple Broccoli; my 3 year-old loves them.
