I love spending time in my kitchen, especially when I can share this time with my kids. And what’s even better than preparing a meal together is making yummylicious treats together. Put those together and you’ve got dessert for breakfast.
Well, sort of. Whole Foods calls this recipe Apple-Berry Baked Oatmeal but doesn’t Berry Breakfast Pie sound more appealing? Especially to a 5 year old?
There’s something so intrinsically fun about mixing up meals, like having eggs or pancakes for dinner, and dessert for breakfast. Since I don’t often have the time to make treats during our busy weeks, I treasure doing these little things on weekends at home.
Ready to make breakfast fun this weekend? Here’s the recipe, thanks to Whole Foods. And for once, I followed it exactly! Oh, except that I didn’t have enough pecans so I made up the balance with slivered almonds. And we used almond milk to make it dairy free.
Apple-Berry Baked Oatmeal (courtesy of Whole Foods)
Canola oil cooking spray
2 cups frozen mixed berries
2 cups rolled oats
1/2 cup chopped pecans
1 teaspoon baking powder
1/2 teaspoon fine sea salt
1 organic apple, peeled, cored and grated (about 1 cup)
1 cup 2% reduced-fat milk (we used almond milk)
1/2 cup nonfat vanilla yogurt (we used soy yogurt)
1/3 cup maple syrup
2 teaspoons vanilla extract
1 egg plus 1 egg yolk
Instructions
Preheat oven to 375°F. Oil a (9-inch) pie pan with cooking spray; set aside. In a large bowl, stir together berries, oats, pecans, baking powder, salt and apple. In a medium bowl, whisk together milk, yogurt, syrup, vanilla, egg and yolk; stir into oat mixture. Transfer to prepared pan and bake until firm and golden brown on top, about 50 minutes. Cut into slices and serve.
We even had a few frozen berries that we picked at our local U-Pick farm last summer that we added to the pie. I have to admit that as delicious as this was, we were all a little sad to say goodbye to our stash of local berries.

These look so yummy! I would be tempted to add ice cream on top, I wonder if yogurt would do the trick.
I love that idea! Yogurt, especially greek yogurt since its a little thicker, would be perfect on top! Let me know if you try it.
I wish my little guys liked berries! Maybe I’ll be making this just for the grown ups. =)
No berries at all, Aimee? You could probably try other fruit but I cannot imagine life around here without berries.
