This past week has finally really felt like fall. We had weekend soccer games in the rain and now keep towels and a change of shoes in our car. It rained so hard, in fact, that my son’s soccer practice ended early this week. The boys were drenched! My daughter was drenched. Hubs was drenched. I kept dry at work until my commute home.
Our daughter had her first grade field trip to the pumpkin patch. The weather was perfect – it rained on the way there but turned to blue skies as we arrived and stayed that way until we started to pack up. The kids had a blast. This is a really good group of six and seven year olds who have been together for over three years so they’re like family.
It was also exhausting. I’ve never slept better and I’m not really sure why since I wasn’t chasing kids or climbing haystacks myself.
Since our weather turned cold and rainy, our meal plan for the week includes warm, comforting food. Of course the kids requested their favorites: mac and cheese, along with pizza. And are loving the Apple Cranberry Gluten Free Pumpkins they made this week. I froze some, thinking we’d never finish 24 muffins before they went bad. Ha! Guess what’s already coming out of the freezer?

Monday – Slow cooker night! Dinner is ready when we get home from soccer. Chicken Adobo over rice with roasted broccoli.
Tuesday – Chicken fried rice without chicken (meatless meal!) so we have leftovers for lunches this week
Wednesday – Breakfast for dinner: scrambled eggs with spinach and roasted potatoes. And apples. We have lots of them.
Thursday – Pizza night! We’ll see what’s on sale and in season at the market to select our toppings.
Friday – I want to make this Pumpkin Thyme Mac & Cheese from Spoon Fork Bacon (doesn’t it look amazing?)
