I fell in love this weekend. I fell in love with long weekends. They’re lovely. Relaxing and productive all at the same time.
I cooked, baked, cleaned, organized, decorated, ran, worked, played games, watched football and lots of soccer, spent time with my family and great friends…and did not shop at all. Oh, and I still have a full day left! I could get spoiled.
But then I look at my calendar and see a hard slap of reality coming Monday morning with another crazy week ahead. My son has basketball and soccer, I’ve got a full week of work and we just picked up tickets to the US Women’s soccer team match against Ireland. Another full week.
We really wouldn’t know what to do with a week on our calendar without all these activities. Oh, wait. I know…I’d fill it up! I don’t sit well.
After a long weekend of indulging, a meal plan with lots of comfort foods should help the reality of real life that much better. Have a great week!
Monday – Slow cooker chicken from InspiredRD over rice with braised bok choy
Tuesday – Homemade macaroni and cheese with roasted broccoli
Wednesday – Meatloaf with mashed sweet potatoes and garlicyk green beans
Thursday – Mexi bowls with roasted squash and avocado
Friday – Slow cooker chicken gohan stew from La Fuiji Mama (sounds so comforting for the busy week’s end)
