This week, we’re celebrating a first in our home. Something that hasn’t happened in longer than I can remember. We have no kid’s activities. Nothing! Not during the week, or the weekend. Basketball and winter soccer have wrapped up for my son. My daughter is waiting for her swim class to start up.
My son was sad to say goodbye to his soccer buddies (even though it’s temporary since spring season starts up in three weeks), but when we realized that we now have every night during the week to be together he totally came around. They really miss those nights when we get busy and family dinners rarely happen.
Three weeks with the ability to have dinner together every night. I feel a little silly saying it. And even sillier getting excited about it. And I’m pretty sure there will be work stuff that gets in the way of a few of those but the idea is still pretty dreamy and we’ll make it happen as many nights as we can.
So, this week the kids decide what we eat and the meal plan is full of their favorites. What are you having that we should try too?
Monday – Deconstructed tostadas (I’m not sure how dinner gets any easier)
Tuesday – Slow cooker coconut ginger chicken and vegetables from Simple Bites
Wednesday - Pesto birds nests (I’ll toss the pasta with pesto like we did for our Dr Seuss celebration)
Thursday – Sausage roll ups with roasted vegetables
Friday – Pizza night (of course)
