The cherry blossoms are in bloom, the mall is decked out with pastels and shorts, birds are chirping, frogs are croaking, spring is…not in the air in Portland today! Yes, we’re officially on spring break for the next ten days but someone forgot to advise Mother Nature. This is not what you want to see in the forecast:
While I’d love to send my kids outside to run, jump and skip today, it’s looking pretty cloudy with a chance of clam chowder like blech. But, we’re Oregonians. We’re used to this and will get outside anyways. Unless the rain is coming down sideways as golf-ball sized hail, we journey on and get out. Otherwise, we’d be indoors way too much! The end of the week’s forecast looks lovely: sunny and 60’s. Around here, that’s short and tank top, go work in the garden and run around the beach weather and we’ll take it any day!

This week, we’ll take advantage of spring vegetables at the market in some of our meals. Here’s a few ideas:
Monday – Creamy shells with chicken and broccoli (yes, this is sort of like mac and cheese, but with the chicken and broccoli, my daughter who gave up mac and cheese for lent is A-ok eating it)
Tuesday - Birds nests with roasted asparagus (the kids have been practically begging for this!)
Wednesday – Grilled quesadillas with spinach and tomatoes and some spanish rice on the side
Thursday - Chicken, peas and pasta toss
Friday – Vegetable pad thai (we’ll toss in a bunch of vegetables to this recipe like broccoli, carrot shreds, and whatever else we have on hand)
